Most Cava sold in the market is the base-model Cava Brut. Check other levels for greater quality. For example, our organic Maria Casanovas Cava is a "Reserva", which aged for a minimum of 18 months on the lees, adding depth, aroma and complexity and surpassing the non-vintage Champagne requirement of 15 months.
Cava undergoes a unique production that includes secondary fermentation in the bottle, trapping CO2 and creating bubbles. While bubbles form within weeks, the aging process enriches the wine significantly. During autolysis, enzymes from the yeast cells (lees) release savoury flavours into the Cava, such as fresh bread dough, white chocolate, and almond-like marzipan.Longer lees aging intensifies these flavours, fundamental to the Champagne method and absent in Prosecco.
